English Real Ale

This, if I do say so, ROCKS! I've made this successfully over four times. It's a very drinkable session brew. (However, I should note that I haven't made this since going all-grain. Last time I made this was in '02 when you could still get Fuggle and Kent Goldings!)

"This medium-bodied ale stays true to the English "pub pint" tradition and features the warm, rounded bitterness of Fuggles and the classic Kent Goldings aroma hops. The unique use of victory lends a fresh, bready aroma and a wonderfully deep, amber reddish color."

English Real Ale

Ingredients:
1 can light malt (3.3 pounds)
1 can amber malt (3.3 pounds) [or just add 6.6 pounds of light]
1/2 pound English Crystal malt
1/2 pound victory malt
1 cup brown sugar
4 ounces malto-dextrin (adds to mouthfeel)
1.5 ounces Fuggle (boil)
1 ounce Kent Golding (last two minutes of boil)
1 package Burton water salts
1 teaspoon Irish Moss
Wyeast Special London Ale


Stats:
- O.G. - 1.040
- F.G. - 1.009 - 13
- IBU - n/a
- Color - amber to brown
- Alcohol - 4%

Instructions:
- Crush and steep grains in cold water, bring water to boil. Remove grains. Add malt, brown sugar, malto-dextrin, and Fuggle hops. Return to boil and boil 45 minutes, add Irish Moss and boil for 13 more minutes. With 2 minutes left in the 60 minute boil, add Kent Goldings. Remove heat and cool. When cool, transfer and pitch yeast. Top off to 5.25 gallons.
