Shameless Seamus Bitter Braggot

This is the recipe for the braggot that I brought to the October meeting tonight. It is a partial mash recipe and is based off of my standard English Bitter recipe (just don't use the honey to make the standard bitter). The Green Bullet hops are from NZ, but you could use any English bittering hop. This batch did not fully carbonate (but that is OK for the style). It was very drinkable after only 3 weeks in the bottle, but its flavor profile as really improved over the past couple of months. What we tasted tonight has been in the bottle for 3 1/2 months and I think it will withstand extended bottle aging for several months. Enjoy! It would be interesting to see what this would be like kegged and force carbonated.

Shameless Seamus Bitter Braggot
Carl Swan

Ingredients:
5 lbs clover honey
5 lbs Extra Pale LME
1 lb Crystal Malt (90L)
2 1/2 lbs 2-Row Malt
1/2 oz Green Bullet (60 minutes)
1/4 oz Green Bullet (15 minutes)
1/4 oz Green Bullet (5 minutes)
Wyeast London Ale 1028 (I made a 750ml yeast start 2 days in advance)
4.5 oz corn sugar (priming)

Stats:
O.G. 1.120
F.G. 1.005 (I am not sure if every batch will ferment this completely or not)
Alcohol 15%

Instructions:
Steep crushed grains at 155 degrees for 45 minutes in 2 1/2 gallons water
Dunk the grain bag a few times then place in strainer
Rinse grains with 2 quarts of 170 degree water
Discard grains and bring wort to boiling
Turn off heat and move pot to cool burner
Add malt extract and honey and stir until dissolved
Return wort to boiling and follow hopping schedule
Cool to 80 degrees and pour into primary fermenter
Add cool water to bring volume to 5 1/4 gallons
Pitch yeast and aerate well

My batch spent 10 days in primary at around 68 degrees and another 17 days in the secondary
I then racked again and let it clear for another week before bottling.

Dissolve priming sugar in 2 cups of boiling water, add to bottling bucket then add braggot and bottle.

I thought it was fantastic beer.  I really enjoyed it.  Thanks for posting the recipe.
